Even though the word ‘fried’ is right there on the title of the recipe, this is quite a nutritious dish because of the mix of vegetables. So, in this version of the meal, you’ll just need a red bell pepper and some peas together with some green onions. But the truth is that the sky’s the limit for the array of vegetables you can bring to the skillet.

Best Rice To Use

As you know, white rice is no longer the only option for rice-based meals. For every dish, you’ll find the perfect rice match depending on how starchy, fluffy, firm or whatever you want.

For this specific meal, you can use a long-grain white rice which, if made in advance, will bring firmness to the meal. Brown rice is also an option, but remember this takes much longer to cook.

Now, a great and maybe not so common option is Jasmine rice. This type of rice is an aromatic type, when you cook it, you’ll feel the fragrance that it releases. And it’s not just about the smell, that same fragrance is impregnated in every dish it is used for. Country to most types of rice which take over fifteen minutes to cook and need double the water, Jasmine rice is perfect if you’re in a hurry. It just takes ten minutes to cook and a cup of water for every cup of rice you need.

It is a quite starchy rice so, if you don’t like this characteristic, you can rinse and wash it under cold water for a couple of times before cooking.

How To Prepare It

This recipe is definitely not vegetarian, but feel free to replace the shrimps with veggie-friendly options if desired. Even though you’ll see several steps, this recipe just takes two pots, one for the rice and one for the frying process. It doesn’t take either many elements nor much time.

Ingredients:

  • 3 cups of Jasmine, white or brown rice
  • Extra virgin olive oil
  • 2 eggs
  • 1 red bell pepper
  • 1 cup of snow peas
  • 5 cups of shrimps
  • ½ cup of frozen peas
  • 2 tbsp of soy sauce
  • ½ cup of green onions

Instructions:

  1. You’ll start by cooking the rice. Check the water to rice ratio depending on the type of rice you choose. If you make this recipe with Jasmine rice, use a one-to-one proportion and cook for no over ten minutes. If you choose white or brown rice, use a two to one proportion and cook for at least fifteen minutes or until you get the desired consistency.
  2. As the rice is cooking, take a skillet and pre-heat some extra virgin olive oil over medium heat.
  3. Add two full eggs and scramble them until they are soft. Cook for about a minute and quickly remove that from the skillet, so they don’t overcook. Remember, eggs continue to cook over hot surfaces.
  4. In the same skillet, pour some more extra virgin olive oil and reheat it.
  5. In the meantime, take the red bell pepper, wash it and chop it all down.
  6. Add the red bell pepper together with the snow peas, which you can slice ahead. Fry those elements for five minutes tops.
  7. The rice should be ready by now, so drain it and add it to the skillet together with the previously peeled and deveined shrimps.
  8. Pour some soy sauce all over the mix and stir continuously so that everything fries for two or three more minutes.
  9. Bring the eggs back and add them to the mix.
  10. You can top everything with some previously washed and chopped green onions.

Regardless of the type of rice you choose, using rice leftovers will bring the dish to the next level as the frying process will make the rice less mushy and firmer. Note that this requires that you make the rice a day ahead, or at least a good six to twelve hours ahead.
